At "The Borma," we embark on a gastronomic odyssey that transcends borders, weaving the distinct flavours of Canada’s northern landscapes with the rich culinary influences brought by generations of settlers, immigrants, and Indigenous communities. Each dish tells a story, blending age-old traditions with contemporary techniques to craft a menu that is as innovative as it is authentic.     BISON BANNOCK POPS

    Crescent bannocks stuffed with ground bison and pan fried, served with smoked Gouda dip   

    KLONDIKE POTATO CHOWDER

    Creamy vegetarian, potato, celery.     

    WEST COAST SALMON SOUR SOUP

    Wild caught Pacific Salmon, radish, tomato, red seaweed, jalapeno, bokchoy

    SASKA LENTIL SOUP

    Red lentils, spinach, cream, chilli, spices

    BOREAL SEAFOOD CHOWDER

    Shrimps, clams, fish, celery, garlic, potatoes 

    ATHABASCAN PUMPKIN SOUP

    Roasted pumpkin, cinnamon, wild rice dumplings, cream.

    ELK PIEROGI

    Elk forcemeat, Smetana cream, scallions, micro radish.


    MAINS

    BRAISED WILD BORE WITH FLAKY BANNOCK

    Slow braised wild bore shoulder with flaky crushed bannock.

    RABBIT STROGANOFF

    Sauce viande, sour cream, served with noodles and  sourdough bread       

    SMOKY N MASHY

    Traditional smoked sausage with  mashed potato and onion gravy   

    WILD BORE MEAT BALL IN MUSHROOM SAUCE

    House made smoked wild bore meat balls, creamy mushroom gravy, corn bread, crack malt and caraway dumplings.

    SPRING CHICKEN STEW WITH HOPPERS

    Chicken, potatoes, coconut, mildly spiced gravy.

    BROILED PACIFIC SALMON

     4 Oz wild caught pacific, Sitka spruce pesto, maple butter sauce, garlic mashed potato.   

    SPRUCE BEER BRAISED BEEF SHORTRIBS

    Alberta beef, Yukon gold mashed potato, corn bread, gravy.  

    MAPLE SOY BRAISED PORK

      

    Bok choy, rice, pepper, chili.

    BISON CHILLI TACOS

    Alberta bison chili, Cole slaw,  Pico di gallo, queso, pickled sabolla, 4 four inch corn tortillas.   

    VENISON MAFALDINE

    Ground venison, marinara,  cheese sauce, Grana Padano.         

    BISON BOLOGNAISE

    lean bison ragu, Parmiggiana Reggiano, Gorgonzola cheese emulsion.   

    SEAFOOD PACCHERI

    Scallops,  prawns, calamari, artisan al dente pasta, garlic cream sauce, house made bread.

    BAKED ELK COQUILLES

    Artisan shell pasta with elk smokies, marinara and garlic cream sauce, Parmigiana Reggiano.   

    PIROGIE WITH WILD BORE RAGU

    Cheese perogies with aromatic wild bore ragu.   

    WILD MUSHROOM ARABBIATTA

    Dry wild mushrooms, local fresh mushrooms, spruce and dry tomato pesto, cream, garlic, asparagus, chili pepper.

    GRILLED ARCTIC CHAR

    Marinated with Sitka spruce tip pesto and broiled. Served with local seasonal vegetables and potatoes.

    BORMA BBQ PLATTER

    Smoked pork ribs, meat balls, BBQ Chicken, Grilled corn, cornbread, cole slaw, spicy dips, Pickled quail egg, Local half sour pickles, Yukon Gold Potato wedges, BBQ onion, onion rings.

    RIGATONI WITH WILD MUSHROOM AND SPRUCE TIPS

    Al dente rigatoni pasta, spicy tomato sauce, cream, wild mushrooms, spruce tips, asparagus, Parmesan cheese.

    DESSERTS

    TRIPPLE BERRY SORBET

    Wild blueberry, strawberry, haskap, served on a waffle cup.

    HASKAP CHEESE SOUFFLE WITH COOKIE CRUMBLE

    Haskap berries, cream cheese,crumbled cookies.

    PEACH AND MAPLE CARAMEL GELATO

    House made, served on a waffle cup.
